Spicy Chipotle Turkey Burgers

Ingredients

  • 1 pound ground turkey
  • 1/2 cup finely chopped onion
  • 2 tablespoons chopped fresh cilantro
  • 1 chipotle chile in adobo sauce, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon seasoned salt
  • 1/4 teaspoon black pepper
  • 4 slices mozzarella cheese
  • 4 sandwich thins, split and toasted

Directions

  1. Preheat olive oil in a frying pan.
  2.  Place the ground turkey, onion, cilantro, chipotle chile pepper, garlic powder, onion powder, seasoned salt, and black pepper in a mixing bowl; mix well. Form into 4 patties.
  3. Cook the hamburgers in the frying pan until the turkey is no longer pink in the center, about 4 minutes per side. Place the mozzarella slices on the patties 2 minutes before they are ready. Serve on the toasted buns.

Easy Strawberry Cheesecake

2 (8 oz pkgs) light cream cheese, softened
1/2 cup sugar
1/2 tsp. vanilla
2 eggs
1 (9-inch) graham cracker pie shell – unless you make your own
1/2 cup light sour cream
3 cups strawberries, sliced and sprinkled with a little sugar – otherwise buy a large can of strawberry pie filling.
2 tbsp. sugar-free strawberry jam, slightly melted

Preheat oven to 350°F.

In a large bowl, with mixer, mix cream cheese, sugar, vanilla until well blended. Add eggs, mix well. Pour into crust. Cook 40 minutes or until almost set in the middle.

Cool on wire rack for 1 hour. Add strawberry mixture to top of cheesecake and then refrigerate for 3 hours.

Garlic Parmasean Chicken Bake

Serves: 6

Ingredients

  • 2 tablespoons olive oil
  • 1 clove garlic–  minced
  • 1 cup dry bread crumbs
  • 2/3 cup grated Parmesan cheese
  • 1/4 teaspoon ground black pepper
  • 6 skinless, boneless chicken breast halves

Directions

  1. Preheat oven to 350 degrees F. Lightly grease a 9×13 inch baking dish.
  2. In a bowl, blend the olive oil and garlic.
  3. In a separate bowl, mix the bread crumbs, Parmesan cheese, and pepper.
  4. Dip each chicken breast in the oil mixture, then in the bread crumb mixture.
  5. Arrange the coated chicken breasts in the prepared baking dish, and top with any remaining bread crumb mixture.
  6. Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

Serve with steamed green beans, a rice mixture and a green salad.
