Garlic Prawns

Ingredients

  • 1/2 cup olive oil
  • 1 tablespoon Dijon mustard
  • 3 cloves garlic, minced
  • 1 lemon, juiced
  • 1 orange, juiced
  • 1 teaspoon dried basil, or to taste
  • 2 tablespoons white wine (optional)
  • 30 tiger prawns, peeled and deveined

Directions

  1. In a glass dish, mix together the olive oil, mustard, garlic, lemon juice, orange juice, basil and white wine. Add the prawns, and stir to coat. Cover, and let marinate for 1 hour.
  2. Heat an outdoor grill to high heat.
  3. Thread prawns onto skewers. Grill for 3 to 5 minutes, turning once, until pink.

Shrimp Fajitas – Quick & Easy

Ingredients

  • 1 1/2 tablespoons vegetable oil, divided
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 pound medium shrimp – peeled and deveined
  • 1 cup (1 small) chopped onion
  • 1 (1.25 ounce) package taco seasoning mix
  • 3 tablespoons water, or as needed
  • 6 (10 inch) flour tortillas, warmed

Directions

  1. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the red and green bell peppers, and onion. Cook, stirring frequently until peppers are hot, but still slightly crisp, about 5 minutes. Remove from the skillet and set aside.
  2. Pour the remaining 1/2 tablespoon of oil into the skillet, and add the shrimp. Cook, stirring occasionally, until pink and opaque. Reduce heat to low, and return the peppers and onion to the skillet. Stir in taco seasoning and water so that everything is evenly coated. Simmer until peppers are heated. Serve in warm tortillas.

 

Honey Mustard Grilled Chicken

Ingredients

  • 1/3 cup Dijon mustard
  • 1/4 cup honey
  • 2 tablespoons mayonnaise
  • 1 teaspoon steak sauce
  • 4 skinless, boneless chicken breast halves

Directions

  1. Preheat the grill for medium heat.
  2. In a shallow bowl, mix the mustard, honey, mayonnaise, and steak sauce. Set aside a small amount of the honey mustard sauce for basting, and dip the chicken into the remaining sauce to coat.
  3. Lightly oil the grill grate. Grill chicken over indirect heat for 18 to 20 minutes, turning occasionally, or until juices run clear. Baste occasionally with the reserved sauce during the last 10 minutes. Watch carefully to prevent burning!

Wonderful Raspberry Walnut Dinner Salad

Ingredients

  • 1 (10 ounce) package mixed salad greens, rinsed and dried
  • 1 (8 ounce) package sweetened dried cranberries
  • 1/4 cup sunflower seeds
  • 4 roma (plum) tomatoes, chopped
  • 1 avocado – peeled, pitted and diced
  • 1/2 (8 ounce) bottle raspberry walnut vinaigrette

Directions

  1. In a large bowl, toss together the salad greens, cranberries, sunflower seeds and tomatoes. Top with avocado (and chicken strips, if desired), add vinaigrette and serve.

Simple and Quick Shrimp Scampi

Ingredients:

  • 1 lb of medium to large size shrimp w/ tails
  • 3 tablespoons of butter
  • 6 cloves of garlic
  • 3 tablespoons of olive oil
  • black pepper
  • freshly grated Parmesan cheese
  • 1/2 box of angel hair pasta

Directions:

  1. place shrimp on large bowl under cold running water
  2. remove tails and butterfly shrimp by slightly cutting along vein
  3. set aside shrimp in strainer to drip dry
  4. chop up all garlic as fine as possible
  5. add olive oil, butter and garlic to frying pan – heat at medium until simmering
  6. bring pot of water to a boil for noodles
  7. add noodles to water and boil for 8 minutes
  8. add shrimp to frying pan while noodles are cooking
  9. saute shrimp in butter and garlic for 5-6 minutes.
  10. remove frying pan from heat – allow shrimp to slightly cool in butter sauce
  11. strain noodles – when complete cooking
  12. pour cooked noodles into large bowl, add entire shrimp mixture from frying pan
  13. toss in bowl to mix well – add 3 tablespoons of fresh Parmesan cheese, toss more and serve

** great with fresh steamed asparagus or green beans with almond shavings.

Chicken and Artichoke Pizza

  • 1 (11 ounce) package Grilled and Ready Cooked Grilled Chicken Breast Strips
  • 1 (10 ounce) pre-baked pizza crust
  • 4 Roma tomatoes, thinly sliced
  • 1 clove garlic, minced
  • 1 (6 ounce) jar artichoke hearts, marinated, drained and coarsely chopped
  • 1/2 teaspoon dried basil leaves
  • 1 1/2 cups mozzarella cheese, shredded

Directions

  1. Preheat oven to 425 degrees F. Place pizza crust on baking sheet.
  2. Top pizza crust evenly with tomato slices. Sprinkle with garlic. Top with artichokes and chicken. Sprinkle with basil. Top with cheese.
  3. Bake pizza 12 to 17 minutes or until hot and cheese is melted.
