Blueberry Lemon Bread

Ingredients:

1/3 cup butter, melted
1 cup white sugar
1 lemon, juiced
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
2 tablespoons lemon zest
1 cup fresh blueberries
2 tablespoons lemon juice
1/4 cup white sugar

Directions:

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8×4 Inch loaf pan. In a medium bowl, mix flour, baking powder and salt together and set aside.

2. In a large bowl, cream the butter and 1 cup sugar until light and fluffy. Add eggs, and beat well. Mix in the juice of 1 lemon. Add the flour mixture, alternating with the milk. Fold in the lemon zest and blueberries. Pour into prepared 8×4 inch loaf pan.

3. Bake for 60 to 70 minutes, or until a toothpick inserted into the cake comes out clean. For the glaze, combine 1/4 cup sugar with 2 tablespoons lemon juice. Drizzle over cake while still warm.

Bacon Corn Breakfast Muffins

Ingredients

  • 4 slices bacon
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 2 tablespoons white sugar
  • 1 tablespoon wheat germ
  • 1/2 teaspoon salt
  • 2 eggs, beaten
  • 1/3 cup milk
  • 1 cup canned cream-style corn
  • 1/4 cup butter, melted
  • 1/4 cup vegetable oil

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease 12 muffin cups.
  2. Place bacon in a skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  3. In a large bowl, combine flour, baking powder, baking soda, sugar, wheat germ and salt. In a separate bowl, combine eggs, milk, corn, butter, oil and bacon. Stir egg mixture into dry ingredients, just until combined. Spoon batter into prepared muffin cups.
  4. Bake in preheated oven for 20 to 25, until golden brown.

Blueberry Flax Pancakes

Ingredients

  •  1 1/2 cups dry pancake mix
  • 1/2 cup flax seed meal
  • 1 cup skim milk
  • 2 eggs
  • 1 cup fresh or thawed frozen blueberries

 

Directions

  1.  Set a nonstick skillet over medium heat.
  2. In a medium bowl, stir together the pancake mix and flax seed meal. In a separate bowl or measuring cup, whisk together the milk and eggs. Pour the liquid into the dry ingredients, and stir just until moistened.
  3. Spoon 1/4 cupfuls of batter onto the hot skillet. Sprinkle with as many blueberries as desired. Cook until bubbles appear on the surface, then flip and cook until browned on the other side.

 

 

Orange Poppy Seed Muffins

Ingredients

  • 2/3 cup butter or margarine, softened
  • 1 cup sugar
  • 2 eggs
  • 1 cup plain yogurt
  • 1/4 cup orange juice concentrate
  • 1 tablespoon grated orange peel
  • 1 teaspoon orange extract
  • 2 2/3 cups all-purpose flour
  • 2 tablespoons poppy seeds
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Directions

  1. In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Stir in the yogurt, orange juice concentrate, orange peel and extract. Combine the dry ingredients; add to creamed mixture just until moistened. Fill paper-lined muffin cups two-thirds full. Bake at 400 degrees F for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

  • 1 cup quick-cooking rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 cup wheat and barley nugget cereal (e.g. Grape-Nuts™)
  • 1/2 teaspoon ground cinnamon
  • 1 beaten egg
  • 1/4 cup applesauce
  • 1/4 cup honey
  • 3 tablespoons brown sugar
  • 2 tablespoons vegetable oil
  • 1/4 cup unsalted sunflower seeds
  • 1/4 cup chopped walnuts
  • 1 (7 ounce) bag chopped dried mixed fruit

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Line a 9 inch square baking pan with aluminum foil. Spray the foil with cooking spray.
  2. In a large bowl, stir together the oats, flour, cereal, and cinnamon. Add the egg, applesauce, honey, brown sugar, and oil. Mix well. Stir in the sunflower seeds, walnuts, and dried fruit. Spread mixture evenly in the prepared pan.
  3. Bake 30 minutes, or until firm and lightly browned around the edges. Let cool. Use the foil to lift from the pan. Cut into bars or squares, and store in the refrigerator.

  • 1/2 cup raisins
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon

Directions

  1. Beat together oil and sugar. Mix in eggs, milk, salt, baking powder, oatmeal. Beat well then stir in raisins. Pour into a lightly grease pie pan. Sprinkle with brown sugar and cinnamon. Refrigerate overnight.
  2. The next morning, preheat oven to 350 degrees F (175 degrees C).
  3. Bake in preheated oven until firm, about 35 minutes. Serve hot.
